Sometimes after a long day the thought of cooking up another low-carb meal from scratch can fill you with dread or have you reaching for the takeaway menus in desparation.
On days like these, I like to put together a really simple plate of keto friendly ingredients straight from the fridge or cupboard, with hardly any preparation needed.
Tonight’s selection consisted of:
1/2 pack of charcuterie meat selection
80g Sunblushed tomato and mozarella
1/2 avocado
1 Atkins Crispbread spread with butter
Chunk of chilli and garlic cheddar
The beauty of this type of meal is that it can be so easily adapted to whatever you have on hand, but I always include some type of sliced meat and cheese. The Atkins Crispbreads are a new find for me, only 1.8g net carbs per crispbread, providing a wafer/cracker like crunch which is a welcome change to the texture of most low carb foods.
