Smoked salmon and cucumber are a classic combination, light, refreshing and perfect for a starter course or quick lunch. I like to spiralise up my cucumber to give a bit of a twist to the presentation. A spiraliser is a great addition to any keto kitchen, I have this style here which can make either delicate noodles or intricate thin shavings out of any vegetable with ease. You could easily bulk up this dish with avocado slices, salad leaves or feta cheese to make it into a more substantial dinner.

This simple light meal is perfect as a dinner party starter or quick lunch.
Ingredients:
- 1 whole cucumber
- 100g smoked salmon
- sprig of dill
- lemon wedge to serve
Instructions:

- Spiralise the cucumber into long strands and arrange in a neat pile on the serving plates.
- Rip the smoked salmon into bite-sized pieces and place in and around the cucumber.
- Chop the dill and scatter over the top. Serve with the wedge of lemon.
