Some of my favourite meals and recipes come at the end of the week when I am trying to use up random bits of leftover ingredients in the fridge before the weekend grocery delivery. This week I had half a packet of sliced ham and a large chunk of celeriac to use up, and so this recipe was born! I whizzed up the ham and celeriac in my food processor, adding some gherkins (dill pickles), onion and one green chilli. The result is a delicious tangy, meaty salad, perfect as a super low-carb alternative for any time you want to substitute out potato salad or coleslaw.

A low-carb replacement for potato salad or coleslaw.
Ingredients:
- approx 150g sliced ham
- 1 small onion
- 4 or 5 Dill pickles (gherkins)
- 1 clove garlic
- 1 green chilli pepper
- 1/2 a celeriac
- 3 tablespoons mayonnaise
Instructions:

- In a food processor, use the chopping blade to pulse the ham, onion, garlic, chilli and gherkins until finely chopped.
- Switch the blade over to the grating attachment and grate in the celeriac
- Stir in the mayonnaise and serve!
